I wish there was more policy and drive in encouraging people to eat more local and organic food. Health starts in the gut, no one ever got obese on carrots.
May I suggest, if you are not already, trying to mix in fermented foods. Real pickles (not quick pickles) or Kimchi are quickly available, maybe an acquired taste but it can be acquired. If not, yogurt is great.
Fermented foods are something I should probably have more of yes. I honestly don't know what the difference between real pickles and quick pickles is, care to inform?
"pickling", how you get real pickles, is putting something in a brine and allowing it to ferment in the no oxygen environment. That's what allows all the probiotics to grow, and they further break the cucumber down creating prebiotics. All very good for your gut.
Quick pickles are what you usually see on a shelf, and its just a cucumber in vinegar. I think always a sterilized vinegar not a living one. Tastes like a pickle, but no biotics. They aren't bad for you or anything, they are just a cucumber with a bit of white vinegar - kinda a lousy salad.
